Union Hand-Roasted have been a benchmark for UK specialty coffee since before “specialty” was a common term here. Founded in East London in 2001, they were sourcing directly from farms and paying above-market prices a decade before it became fashionable. The Revelation is their flagship espresso blend, and it’s a stoater.

The Blend Profile

Revelation combines Colombian and Ethiopian beans, a classic pairing that balances structured sweetness (Colombia) with fruit complexity and florality (Ethiopia). Roasted to a medium development that sits lighter than most commercial espresso blends while remaining approachable for a range of extraction styles.

It’s a blend designed for specialty espresso drinkers who want complexity without the harshness of darker roasts.

Aroma

Out of the grinder: blood orange, dark berry, a hint of floral rose. This is not a chocolate-and-nuts espresso aroma. It’s more vivid and complex, closer to a fruit-forward filter coffee in character. That might sound challenging, but it’s genuinely appealing.

Pulling the Shot

This is where the Revelation rewards attention. It’s less forgiving than darker blends. Extraction parameters matter. At 93°C, 27 seconds, 1:2 ratio:

A beautiful espresso. The blood orange character is upfront and bright, the milk chocolate provides body and sweetness to balance, and there’s a dark berry (blackcurrant) note on the finish. The crema is persistent and orange-tinted, a classic indicator of good extraction on an Ethiopian-influenced blend.

Go slightly too short (under-extract): overly bright and acidic. Too long: the sweetness pushes into slightly bitter territory. There’s a narrower sweet spot here than with a dark blend, but once you’ve found it, it’s exceptional.

Temperature: 92–93°C works best. Higher temperatures exaggerate the acidity; lower mutes the complexity.

As a Milk Drink

Revelation is primarily designed as a straight espresso, but it handles milk surprisingly well. The blood orange character turns into a marmalade note in a flat white, more interesting than the typical chocolate-and-caramel result you’d get from a commercial blend. A properly made flat white with Revelation is a genuinely exciting drink.

The Revelation is a completely different beast from Union’s Bright Note Filter. Revelation rewards espresso technique; Bright Note is designed for filter and supermarket convenience. If you’re buying from Union specifically for espresso, Revelation is the one.
